On yesterday’s blog, Suzanne Woods Fisher talked about how the Life with Lily series came about. She mentioned some mouth-watering recipes that we thought would be fun to share.

Mama’s Pumpkin Pie

1 1/2 cup pumpkin
1 1/2 cup white sugar
1 1/2 cup brown sugar
4 1/2 Tbsp. flour
1 tsp salt
1/2 tsp nutmeg
1/4 tsp cloves
1 tsp cinnamon
4 eggs, separated
4 1/2 cups milk

In a large bowl combine pumpkin, sugars, spices, salt, and flour. Mix well. Separate the eggs. Reserve the whites in a small bowl and add the yolks to pumpkin mixture. Mix well. Add milk and mix again. Now beat the egg whites until they form soft peaks. Fold evenly into pumpkin mixture. Divide into three 9 or 10 inch unbaked pie crusts.
Bake in a preheated 350-degree oven for 45 minutes.

Mama’s Prize Winning Pie Crust

3 cups flour
1 cup butter flavored Crisco
1/3 cup vegetable oil
1/3 cup milk
1/3 cup water

Mix flour and Crisco by hand until the crumbs are all uniform in size. Add liquids and stir and mix gingerly by hand. It is quite gloppy at this point but in a few moments it turns into soft pie dough.
Divide into three or four patties and roll out on floured surface. It is a good idea to flour your rolling pin also.

Yield 3 or 4 pie crusts, depending on how thinly you roll the dough.

Lily’s Favorite Birthday Fried Chicken

2 cups flour
2 Tbsp salt
2 Tbsp black pepper
1 Tbsp parsley flakes
1 Tbsp thyme
1 Tbsp dry mustard
1 tsp ginger
1 tsp paprika
1/2 tsp garlic powder
1/2 tsp oregano
1/2 tsp basil

Mix all together and place half of the mixture in a large plastic bag.

Beat two eggs very well. Roll chicken in beaten eggs. Then drop in seasoning mixture plastic bag and shake to coat.

In a saucepan or deep skillet, heat vegetable oil up to 250. The oil should be deep enough to cover half of the chicken pieces. Carefully place coated chicken pieces in the hot oil and fry until a delightful golden brown. Turn over and fry the other side.

Preheat oven to 350. Have an oven-ready pan lined with parchment paper for the chicken as soon as it comes out of the oil. Place chicken on pan. Bake in oven for 20-30 minutes (up to 45 minutes if you have extra large pieces of chicken).
